Chinese Coleslaw

Ingredients (use vegan versions):

    1 cup white or napa cabbage, shredded
    1 large carrot, grated
    1/4 cup shredded daikon radish
    1 teaspoon sesame oil
    3 tablespoons rice vinegar
    1 tablespoons agave nectar
    2 teaspoons toasted sesame seeds
    spring onions, to garnish

Directions:

1) Toss all ingredients vigorously, let stand for 15 minutes and eat!

I came back from Koreatown on a mission to recreate this amazingly fresh, marinated little side dish that the waitress brought to our table at lunch.

I think this is it!  I've had three bowls since yesterday and I don't want to stop!

A word of warning, though-- the amounts may not be exact... I always just throw everything together without measuring.

i made this with a bag of preshredded cabbage. yum! next time, i'm gonna use the dressing recipe and pimp out the salad part with some cabbage mix, celery, snap peas, carrots and whatever else my heart desires. oh, ans cashews. YUM.

this was good, but i added a broccoli stem (happened to be around), tamari, lots of black pepper and a squirt of sriracha - delicious!
