Easy Chilaquiles

Ingredients (use vegan versions):

    1 large handful corn tortilla chips
    1/2 cup Mexican salsa
    1/4 cup bell pepper, diced
    1/2 cup cooked  black, kidney, or Mexican red beans
    1 tablespoon cilantro, chopped
    1 green onion, chopped
    1/2 small tomato, chopped
    1 cup cabbage, shredded

Directions:

Using good salsa and good chips is the key to making the best chilaquiles!  I used TJ's Veggie and Flaxseed Tortilla chips, and their Tomatillo and Roasted Yellow Chili Salsa.  YUM.

1) In a medium pan, heat a small amount of olive oil and add tortilla chips and bell pepper. Pour salsa over chips and toss to coat. Fry several minutes until chips begin to get soggy, then add beans and cilantro. Toss gently once more, then plate on a bed of shredded cabbage. Top with extra cilantro, scallions and diced fresh tomatoes.

I've been wanting to make this recipe for a long time! Chilaquiles was seriously one of my favorite dishes when I was an omni.  According to my husband this was really delicious.   I wasn't able to try it because i'm on a strict 6 week thing (eat to live), soooo...I was super jealous watching him eat this.  But that's ok.  I'm happy that I was able to make something that he enjoyed.  I served this with a doloup of guacamole, and that is the only change I did.  Smitten

This was SO amazing... I've made it 3 times now and still have cravings for it most days...  Smitten It's never the same twice depending on what I have on hand, but usually I use a sweet corn and black bean salsa (my husband loves sweet salsas) with more black beans and some frozen corn tossed in too. One time I didn't have any cabbage and so I used some leafy green lettuce and made some inside-out taco things by wrapping the mix in a leaf of lettuce, but I think I prefer the cabbage - so sweet and tasty! I'd never heard of these before we went vegan, but boy am I happy to know them now, thank you!  Cheesy

REALLY good!  I had to make do with what I had (corn tortillas instead of corn chips) and I added red onions w/ the bell peppers since I didn't have green onions.  I was craving cabbage and this hit the spot!  Thanks for the recipe!
