Sloppy Jolene's

Ingredients (use vegan versions):

    Olive Oil
    1 Cup Chopped Onion
    1 Cup Chopped Peppers (Green, Yellow, Orange, or Red)
    1 Cup Chopped Spinach (I use Fresh, but I am sure Frozen would work)
    4 Stalks Chopped up Celery
    2 Tbsp  Ketchup
    1 Tbsp Mustard
    1 can Mashed Kidney Beans (Light or Dark)
    1 Can Diced Tomatos
    1 Tsp Chili Powder
    Cider Vinegar
    Sandwich Rolls, or buns

Directions:

Put some Olive oil in a fairly large pan or pot. Heat up over medium.

 Add Onions, Celery, Cook for about 5 min.

 Add Peppers and garlic, Cook until Tender.

 Add Spinach, cook until tender.

Once all the veggies are done, add Ketchup and Mustard. Stir well.

Add Mashed Beans, Diced Tomato's, and Chili Powder. Stir Well.  

Reduce Heat to Medium Low and cook 5 min or so more, stirring frequently.

If It is to dry, you can add up to 1/3 cup of Cider Vinegar.  

Serve on top of toasted bun or roll.
