Easy Bok Choy Stir Fry

Ingredients (use vegan versions):

2 to 3 cups bok choy
2 to 3 squirts Braggs Amino Acids
    1 teaspoon ginger, chopped
    1 teaspoon garlic, chopped
1 to 2 teaspoons sliced green onions
    1 to 2 tablespoons mirin
    red chili powder, to taste
    sesame seeds

Directions:

1) Cut bok choy in bite sized pieces.

2) Heat a frying pan over medium heat. Add all ingredients except sesame seeds and cook for about 5 minutes until the bok choy gets semi translucent. You want the bok choy to still be a little crispy.

3) Plate and garnish with sesame seeds.

Source of recipe: I had left over bok choy and didn't know what to do with it and this is what I came up with

Makes: 1 serving, Preparation time: 5 minutes, Cooking time: 5 minutes

I always use rice wine vinegar or just rice vinegar, the unseasoned kind.  I find mine at Whole Foods but I have seen it at my local Publix grocery store as well so, I would think you could find it in the international isle at your local grocery store as well.  If worse comes to worse use apple cider vinegar but only use 1 tbs. if that is what you have to use.
