Namibia GreensIngredients (use vegan versions): 1-2 large cloves garlic, minced
1/2-1 onion, chopped
1 large bunch mustard greens, chopped
1 can diced tomatoes, drained
olive oil
salt and pepper to taste
Directions:1) Saute garlic and onion in olive oil until soft. Add greens, salt, and pepper until wilted. Add tomatoes and cook until greens are desired softness. Enjoy served over polenta.
Source of recipe: My neighbor from Namibia, Africa brought a dish over made with greens and served it over something very similar to polenta. This is my take on her homeland dish.
Makes: 4-6 servings, Preparation time: 5 minutes, Cooking time: 15 minutes
