Poor College Students Chewy Snack BarsIngredients (use vegan versions): 1/2 cup dried cranberries
1 cup crushed pecans (or halfed pecan that you crush yourself using the sealed bag and hammer)
2 tablespoons vanilla
2 tablespoons lemon juice
1/3 cup soy milk
2/3 cup water (break into two 1/3 measure ments)
8 bags instant oatmeal (whichever flavor you prefer)
1/2 cup powder sugar
1/2 cup agave nector
and anything else you might feel your tastebuds require right now!
----> Examples are: Chocolate or Bananas
HIGH ALTITUDE: Double water needed
Directions:WELL I'M GLAD TO SEE THAT YOUR LOOKING INTO THE FINE FOOD MY MIND HAS PRODUCED I HOPE YOU LIKE IT!
1) Wash all fruits you wish to use, please remember personal style is always the best. With the measuring glass in front of you, please place the following together IN THIS EXACT ORDER: pecan's, soy milk, vanilla. Set aside (in fridge maybe). If you are over 21 and are feeling a little dangerous, you can add 2 shots of your favorite liquor to add a little spice.
2) With a large mixing bowl in front of you, please place the following together inANY ORDER: cranberries, lemon juice, nector, and 1/3 cup of water. Using spoon, mix together until the cranberries are all covered. Also can add anything else you crave here. Now please add oatmeal (I used 4 bags of borwn sugar & maple syurp and 4 bags of apple & cinnamon). Mix really good. Add rest of water. Mix again. Add measuring glass concoction to large mixing bowl. Will be sorta runny/soupy.
3) Preheat the oven to 300 degrees Fahrenheit. Pour mixture from mixing bowl into a 13" x 9" baking dish and smooth out with spoon. Let sit on counter for 20 minutes (for oatmeal to suck every liquid thing up.)
4) Spread powder sugar in semi thin layer over the top and put in oven for 45-60 minutes (till sugar on top is yellow-ish/opaque).
5) Please use potholders and take dish out and let cool for 10 mins on counter. Please turn off your oven (or large toaster) now! Save energy and all.
6) After cooling, place in frisge for at least 1 hour, until chilled.
ENJOY!! Please tell me what you think! These make great snacks throughout the day or breakfast menu items. Also great for parties (especially at the ones where non-vegan/vegetarian menu items are served...hint hint!)
Source of recipe: I was playing around in the kitchen trying to make an existing recipe but I didn't have all the ingredients so here is my verison with the stuff I had. WAY BETTER THAN ORIGINAL!!!
