Simple Potatoe Salad (no weird stuff)Ingredients (use vegan versions): 8 small/medium russet potatoes
3/4 cup diced red onion
3/4 cup diced celery
1/4 cup sliced green onions
1/2 cup sweet relish
3/4-1 cup vegan mayo (to taste)
3-4 T yellow mustard
celery salt to taste
black pepper to taste
paprika to taste
Directions:FYI: I LOVE ONIONS! So you might want to cut back on the amount of onions if your don't love them like I do. Also these measurements are all approximate.
Fill large pot with hot water and begin to boil the water on your stove.
Wash, peel, and chop your potatoes into bite sized pieces of roughly the same size. Place potatoes into hot or boiling water, stirring occasionally.
Meanwhile chop up your red onion, celery, and green onion.
When your potatoes start to get tender (about 15 minutes) they are done. Put a colander in your sink and dump the potatoes in and rinse them with cold water to cool them down. Save the pot you were cooking your potatoes in. Let the potatoes cool for about 5 minutes.
Dump the cooled/drained potatoes back into your pot and mix in all the ingredients EXCEPT PAPRIKA: onions, celery, mustard, vegan mayo, sweet relish, celery salt, and pepper. Put your pot of potato salad into your fridge and let cool for an hour or so.
Top potato salad with paprika when you are ready to serve.
