Super Easy Dark Chocolate Banana Bread

Ingredients (use vegan versions):

    1 1/2 cups all purpose flour (Arrowhead Mills is great)
    3/4 cups turbinado or light brown sugar
    1 1/2 teaspoon baking soda
    1/2 teaspoon Salt
    1/2 teaspoon cinnamon or pumpkin pie spice (optional)
    1 cup plain or vanilla soy milk
    almost 1/2 cup oil (canola or vegetable)
    3/4 teaspoon vanilla extract
    1 banana mashed
    1/3 cup vegan dark chocolate chips

Directions:

Preheat oven to 350 degrees Fahrenheit & line a bread pan with parchment paper. Oil the paper with spray or vegan margarine. 
Mix the dry ingredients together in a large mixing bowl. Once properly mixed, make a well in the center of the dry ingredients. Put the mashed banana, soy milk, oil, & vanilla in and mix gently until homogeneous. Put in some of the chocolate with a turn of your instrument, so as to not mix too much.  Pour the batter into your bread pan and top with remaining chocolate chips. By the way, this is great with pecans or other nuts on top too! Bake for about 40 minutes at 350 degrees Fahrenheit. Let cool and enjoy!

So you know, this is one of the most delicious sweet cakes I've had, vegan or not. It is great with cream cheese or cream cheese substitute spread on top!

this is so good ! i actually made muffins instead of a bread loaf, and just baked it for 25-27 minutes instead of 40 minutes. i uploaded pics of them too.

Thank you, Zizozizzy, for trying my dark chocolate banana bread.  I know taking a cake or bread recipe and making it into muffins can be tricky in terms of bake time.  I'm glad they were good...
