Fantastic and So Easy Stuffed Peppers

Ingredients (use vegan versions):

    6 bell peppers (I like green), halved and cleaned
    6 slices of wheat bread, crumbled
    1 cup cooked brown rice
    1 small onion, diced
    basil, salt, pepper
    2 or 3 nice red tomatoes, diced
    6 oz. of your favorite vegan "cheese" (I like Jack), diced
    1/2 lb. veggie crumbles

Directions:

1) Preheat oven to 350 degress Fahrenheit.

2) Half and clean the peppers, then place on a baking pan.

3) Using a large bowl, begin the stuffing by ripping or crumbling the slices  of bread into small pieces (sandwich buns work, too.) Sprinkle the bread crumbs liberally with basil, and salt and pepper to taste. Add the rice, onion, tomatoes, "cheese", and veggie crumbles. Mix it all together and spoon into the pepper halves.

4) Bake for 30 minutes then check. If the peppers are not as tender as you like (and I like mine tender) bake for another 5-10 minutes.

Note: any leftover stuffing can go in the oven in small baking dish.

These were really good  Thumbs Up!  I also added a little Onion Powder & a lot of Garlic Powder (I dig garlic  Wink), and put a little ketchup on top before baking.  Baked for 40 minutes.  DELISH!!!  Smitten
