Green Salad with Peanut Dressing

Ingredients (use vegan versions):

    2 cups chopped cabbage (green and purple)
    1 cup spinach
    1 cup romaine lettuce
    tomato, sprouts, avocado (optional)
    3 tablespoons seseme seeds (optional)

Directions:

Dressing:

4 tablespoons braggs liquid aminos
2-3 tablespoons organic peanut butter
1 cup water
1-2 tablespoons flaxseed meal (optional)

Chop up cabbage and toss salad.

To make the dressing scoop about 3
tablespoons of organic peanut butter
into a bowl. Squeeze about 2-3
tablespoons of Braggs liquid aminos into
bowl and add about 1 cup of water. 
Microwave for 30 seconds to heat up
peanut butter to easier stir into peanut
sauce. Add flaxseed meal and stir
(optional). Pour over salad and mix
salad. Sprinkle sesame seeds over salad
(optional).

Enjoy! Also good with organic rices and
lentils mixed in! I have yet to try using
almond butter in the dressing.

Makes: 1-2 servings, Preparation time: 5 minutes

This was super great! I added julienned english cucumbers, sliced onions and cayenne pepper, too! Will definitely make again. My non-salad eating roommate appeared to enjoy it, too, which is always a bonus.
