Almond Joy Brownies

Ingredients (use vegan versions):

    2 cups flour
    2 cup sugar
    1/2 cup cocoa powder
    1 teaspoon baking powder
    1 3/4 cup soy milk (or other milk substitutes.)
    1 3/4 cup vegetable oil
    1 teaspoon vanilla
    1/2 cup chopped almonds
    3/4 cup shredded coconut
    1/2 teaspoon almond extract

Directions:

1. Preheat oven to 350 degrees Fahrenheit.﷯﷯
2. In a medium-sized bowl mix 1 cup flour,
1 cup sugar, 1/2 cup cocoa powder, 1/2
Tsp. baking powder, 1 cup soymilk, 1 cup
vegetable oil and 1/2 Tsp. vanilla until
smooth.﷯﷯
3. In another medium-sized bowl, mix 1
C. flour, 1 cup sugar, 3/4 cup shredded
coconut, 1/2 Tsp. baking powder, 3/4 cup
soymilk, 3/4 cup vegetable oil, 1/2 Tsp.
vanilla and 1/2 Tsp. almond extract untl
smooth.
4. Spread half of the chocolatey mixture
into a greased 9" x 13".
5. Spread the coconut mixture on top of
the chocolate mixture evenly.
6. Stir the chopped almonds into the
remainder of the chocolately mixture and
spread it evenly on top of the coconut
mixture.
7. Bake 25-30 minutes.
8. Cool 10 minutes before cutting into
squares.

I made this recipe myself while fooling
around in the kitchen one day. My batch
came out really good and was a hit with
all of my non-vegan friends, but if you
have any suggestions they're more than
welcome. Smiley

Makes: 9" x 13" pan, Preparation time: 15 minutes, Cooking time: 30 minutes

maybe sub in some applesauce for the oil used in the chocolate mixture.. or maybe a couple flax eggs and make up the difference with applesauce.

for the coconut layer id reduce the oil and maybe add some extra soymilk if it seems too dry.

Totally scratched my gooey, chocolately, coconutty itch.  I don't know if I'll ever make just chocolate brownies again.  the coconut layer is to die for.  these are more cakey then dense, but still a really yummy consistency for brownies.

here's how i altered the recipe:

i halved the recipe and baked it in an 8x8 glass dish.
i used about 1/4 cup less oil and about that much extra chocolate hemp milk for the coconut layer.
i used almond and coconut extract instead of vanilla.
i chopped up almonds and dark chocolate (about 1/3 cup each) and sprinkled them in the chocolately layers.  (which was excellent - next time I'll add even more!)

My only criticism is that it could use more of the chocolately layer!  I'd bet it'd turn out if I baked the full recipe amount.

Also, even 1/2 portion took close to 50 min to cook all the way through, twice what was called for.

Next time, I'll reduce the oil even more, replacing it with some applesauce as suggested.  Thanks!

I bet it wouldn't matter since there is 2 Cups of sugar in it. Use whatever you can find. I never even knew there was more than one type.
