Halloween Veggie Pie

Ingredients (use vegan versions):

    1 small butternut squash, cut into bite size chunks
    1 small to medium rutabaga, cut into bite size chunks
    1 medium sweet onion, diced
    1/2 cup fresh spinach chopped
    2  large carrots chopped
    3 stalks of celery chopped
    8 cloves garlic (less if you arnt that crazy about them)
    1 teaspoon poultry type seasoning ( or any cracked pepper blend)
    scant dash ground cloves
    small pinch anise seed (only like 6 or so seeds)
    scant dash nutmeg
    1 teaspoon smoked paprika
    fresh basil and oregeno
    braggs aminos or soy sauce (just a sprinkle)

Directions:

1. Saute onion, garlic, rutabaga, carrots, celery and spices with olive oil until crisp/tender and browned/carmelized. Add squash last as it cooks up much faster.
 
2. Mash potatoes with soy milk, vegan butter and 1/2 cup nutritional yeast (opt). I also throw in some fresh basil and oregeno.
 
3. On waxed paper or oiled plastic wrap, place a generous amout of mashed potatoes. Sprinkle with flour ( I used corn flour) Flaten the potatoes out like crust. Flip plastic wrap or waxed paper, potato side down into oiled baking dish, making sure the crust goes all the way up the sideds and is even.
 
4. Place this under broiler until lightly brown. Fill with veggie mix. Top with another "crust" making sure to seal the edges. Bake 350 degrees Fahrenheit for 30 minutes or until top is brown.

Makes: 6-8 servings Preparation time: 20 minutes, Cooking time: 30 minutes
