Kale of My LoinsIngredients (use vegan versions): 1 bunch of kale (don't forget to de-stem)
3 mushrooms (thinly sliced)
1/2 large sorrento pepper (thinly sliced)
4 large cloves of garlic (finely chopped)
1/2 carrot (grated)
sea salt
ground pepper
ginger powder
sesame seeds
3 heaping tablespoons vegan butter (I use Earth Balance)
Directions:In large pan (make sure you at least try to use a large pan, or it will be hard to mix accordingly), melt a tablespoon of Earth Balance just enough to fit garlic and sorrento peppers. Add light dashes of salt, ground pepper and ginger powder. (Note: a trick to layering flavor is to add light dashes of spices at certain times throughout the cooking process, an * will represent this action.)
In same pan, make room to melt another tablespoon of Earth Balance without disturbing the garlic and peppers. Add mushrooms to new melt of Earth Balance, *, let saute to wanted texture.
Combine contents of pan, let cook.
Add half of the kale, mix into contents of pan, let cook for a minute. Put to side of pan.
Make room in pan to melt the last tablespoon of Earth Balance, let melt, add the rest of kale, *, mix together.
Combine all contents of pan, cook for 3-5 minutes, grate carrot over contents of pan, mix together.
Eat.
Source of recipe: I pretty much remembered a recipe for greens and used kale. I'm not sure if the recipe for greens is on Vegweb, the thought didn't occur till I started writing this recipe.
Makes: 2-4 servings, Preparation time: 15 minutes, Cooking time: 10 minutes
