Garbanzo Bean SaladIngredients (use vegan versions): 3/4 cup cooked garbanzo beans, drained
1 celery stalk, cut into 1/4" dice
1 Roma tomato, cored and de-seeded, cut into 1/2" dice
flax oil
balsamic vinegar
salt
Directions:1) Put the beans, celery, and tomato in a bowl. Pour over it the flax oil, to taste. I used about 1-1/2 tablespoons. Add a drizzle of vinegar and salt, to taste. Toss well to distribute the dressing. Serve.
Source of recipe: I invented this recipe to fulfill a craving for tuna salad. This combination of oils and acids is vaguely reminiscent of tuna, to my palate.
