Cheesy Garlic BreadIngredients (use vegan versions): Italian bread loaf (day old is OK) - 4 slices
4 fresh garlic cloves
4 teaspoons vegan margarine (I use Earth Balance)
4 ounces shredded vegan mozzerlla (I use Vegan Gourmet)
Directions:1) Preheat the oven to 350 degrees Fahrenheit. Slice a loaf of crusty, Italian bread into generous slices. Shred the vegan mozzarella.
2) Spread roughly a teaspoon of vegan margarine over each slice (or as much as thinly coats it). Peel and press or crush the fresh garlic cloves. Spread about 1 cloves worth over the bread and spread evenly, using the margarine as a base. Top with about 1 ounce of shredded cheese.
3) Put onto a baking sheet into the preheated oven and bake for 10 minutes. Then set to broil for 2 to 3 minutes, just until the cheese is evenly melted. Watch the bread closely during the broil phase so it doesn't burn.
Take out of the oven and serve warm along side your favorite entree.
Notes: The ratio in this recipe is pretty simple. 1 sliced of bread uses roughly 1 clove of garlic, 1 teaspoon of margarine and 1 ounce of shredded mozzarella. So you can make more or less as desired if you plan roughly for these proportions. I always use fresh garlic; it's what makes this so good.
