Seitan-wheat meatIngredients (use vegan versions): 2 cups whole wheat flour
3/4 cups of water
2 tbsp soy sauce
1 tsp garlic powder(optional)
1 tsp ginger powder(optional)
4 cups flavored broth(chicken or beef depending on your taste. You can also make your own)
Directions: Mix flour and spices if you choose to flavor the dough in a medium bowl. Not adding spices does not really effect the taste you will get a chance to flavor the dough once you cook it.
In a separate bowl mix water abd soy sauce together until well combined. Add kiquid to wet ingredients,mix gently. I use my fingers because the dough sort of takes on a rubbery feel to it. Add more water if you need, i always tend to add more flour because i hate sticky dough.
Once mixture is combined knead for about 5-10 minutes then let rest. You can knead it alittle more if you want before you cut it into small pieces.
I cut mine into four pieces because i like a good size portion but again it all depends on what you want. Gently strech the dough into four cutlets about the size of your palm once you cook the seitan it will plump up so if it looks kind of tiny it's ok.
Now heat your broth in a large pot add spices and bring to a low simmer. Now if you didn't add any spices to the dough now would be the time to do it. I made a beef flavored seitan so i added cumin and garlic and some season all to water because i'm real not a big fan of canned broth myself i tend to make my own. Place your wheat cutlets in the seasoned broth and let simmer for an hour.Don't forget to cover with a lid. This is where the seitan really takes on the flavor so don't worry about not adding spices early on.
Seitan is done when it has expanded and slightly firmed. Remove from broth and let cool for about 20-25 minutes.
Now you can use the seitan right after it cools or you can freeze it and use it later. Just don't forget to thaw it out before hand.
The measurements can be adjusted to make a smaller or bigger batch, recipes are made to be twicked so have fun i know i did.
