Oatmeal Protein Bars

Ingredients (use vegan versions):

    3 cups oats
    8 servings protein substitute
    12 tablespoons peanut butter (or your favourite nut butter, I like almond)
    1.5 cups milk substitute
    substitute equal to 2 egg whites
    2 teaspoons baking powder
    1/2 teaspoon salt

Directions:

Combine the above ingredients and put in a greased 9" x 9" pan. Bake at 350 degrees Fahrenheit for 35 minutes. When they are cool, put them in the fridge or they will go moldy in a few days.

Protein:27g
Carbs:21g
Fat:11g

Note: I haven't made them myself yet, and my friend makes these with real eggs and cow's milk, and I'm curious to see if the vegan options are good. Really just posting this so I don't forget to try it!

This is a great recipe!  I added sunflower seeds, flax seeds, and dried fruit.  It's fine without that too.  I had a gastric bypass a couple years ago, and I need to have protein powder to make sure I get enough protein.  Problem is, although I found whey proteins I like (in my pre-vegan days), I can't stand the rice, pea, etc proteins I've tried.  The bars make the protein wonderful!  I look forward to them every day.  The bars are quite "heavy" - believe me, you won't need anything else to make a meal.  If you're on the go, I say they make great travel food.
