Delicously Nostalgic Chocolate Frosting!

Ingredients (use vegan versions):

    2 1/4 cups soymilk
    1/2 cup cocoa powder (unsweetened)
    2 1/2 tablespoons olive oil (or oil of your choosing)
    1 1/4 cup brown sugar
    2 tablespoons cornstarch

Directions:

Pour the soymilk into the saucepan.

Gradually mix in the cocoa powder, then add in everything else except the cornstarch.

Turn up the heat to medium-high and cook, stirring occasionally for 3 minutes.

Add in the cornstarch, and continue cooking and stirring a little more frequently, until mixture comes to a boil.

Boil for 1 minute, or until thickened, and then take the mixture off of heat.
Cool until you can handle it.

Goes great on peanut butter cake, brownies, blondies, cupcakes, choco cake, or any dessert!

Source of recipe: My own personal chocolate creation! Ironically when I tasted it it reminded me of my nostalgic cup cake mix days.

Makes: 20 cupcakes, or two 8 inch cakes., Preparation time: 1 minute, Cooking time: 7-10 minutes

This recipe made an excellent frosting for a double layer chocolate birthday cake I made. The consistency is different
than regular frosting, it is a bit runny, so I ended up gooping all of it onto my cake and keeping it in the fridge until
it was ready to serve. I would be hesitant to use this for taller cakes again but for single layer cakes and cupcakes it
will be just fine.
