Ragin' Cajun Tofu

Ingredients (use vegan versions):

    1 tablespoon Cajun Seasoning
    1 teaspoon cayenne pepper
    1 teaspoon crushed red pepper flakes
    1 to 1 1/2 teaspoons prepared spicy mustard
    2 tablespoons hot sauce
    1 tablespoon vinegar (I use apple cider)
    1- 14 ounce block firm tofu, frozen, thawed and drained (I use Nasoya Lite Firm)

Directions:

1) Freeze the tofu and then thaw. Press tofu to remove water and cut into cubes.
 
2) Place dry ingredients in a container that has a lid or a large, sealable bag. Add wet ingredients and give it a good mix.

3)  Add tofu to the marinade and shake to cover the tofu. Marinate for at least one hour or overnight.

4)  Preheat oven to 425 Fahrenheit. Place tofu on a cookie sheet sprayed w/nonstick spray. Bake for 12 minutes and then flip the tofu and continue baking for another 8 minutes or until done to your liking. Enjoy!

This is one of my new favorite tofu recipes because it is easy to make and tastes pretty good (not to toot my own horn) and depending on the brands you use, it is really low in calories. If I did my math right this is only about 250 calories. This is how I make it but you could try different types of vinegar or frying the tofu if you wish but I personally like the nugget tofu texture you get from baking.  Let me know what you think!
