Seriously Delicious Red Pepper Hummus!

Ingredients (use vegan versions):

    1 can chickpeas, 1/4 cup of juice reserved (you may not need to use all of it)
    3 tablespoons tahini
    3 tablespoons olive oil
    2 red bell peppers, seeded and sliced
    1/3 - 1/2 green bell pepper, seeded and sliced
    1 habanero pepper, seeded
    2 cloves garlic
    1 teaspoon cumin
    1/2 teaspoon salt
    1/2 teaspoon red pepper flakes
    1 teaspoon apple cider vinegar

Directions:


Preheat oven to 400 degrees F. place peppers and halved garlic cloves on a baking sheet and drizzle with olive oil. bake for about 10 minutes. Then combine everything in your food processor and enjoy! i think that roasting your own peppers is far more delicious than store bought  roasted red peppers. this hummus has a little bit of a kick, so for those who don't like spicy foods, you may want to omit the habanero pepper.

Source of recipe: i made this up on my own. originally i had posted it as 'the most amazing hummus ever' and had written the recipe from memory, but after making it again straight from my own directions, it came out HORRIBLY!!! i feel so guity for whoever made it and was not satisfied!!! take two...

Makes: about 2 cups, Preparation time: 15 minutes

mmmmm, delicous hummus, thankyou so much. I made it without the oil, so that there would be less guilt. The consistency and taste was just fine without it. Also Lemon, Lime really add alot to this recipe.  And spices are super important.. I used alot more!

and you right about the water, 1/4 is almost too much..definately blend without the water first and see if you need it or not.

Will definately make again, my family devoured it in just a few days!

OH NO I FORGOT TO LIST IT! I use the juice from 1/2 of a lemon as well. i knew i was leaving something out...

This was absolutely wonderful.  I was feeding my mom, so I had to omit the habanero.  She can't stand anything spicy.  I can't wait to try it with the habanero.  I love spicy food, but I can't imagine that it would be too spicy even with the habanero.

This recipe was delicious!!!  Yummmmmmm.  I wanted something quick for dinner again (this is getting to be a very frequent thing) and decided to try this recipe with some whole wheat pitas.  I had to make the Tahini from scratch (sesame seeds and olive oil) and it turned out great!  I toasted mini pitas and just dipped them in....great quick meal.  Thanks for sharing!
