10 Minute TurnoversIngredients (use vegan versions): 1/2 package phyllo dough
1-2 gala apples (anything really, but red delicous tends to mush)
2 tablespoons water
3-6 tablespoons sugar (depends on your sweet pref)
1/4 teaspoon vanilla
1 teaspoon cinnamon
pinch nutmeg
1 teaspoon arrowroot powder (cornstarch could work the same too) mixed in 2 teaspoons water
1/4 cup vegan margarine (Earth Balance) (oil could work)

Directions:First, make sure that your phyllo is thawed. Always remember to handle delicately!
In a small pan, placed chopped apple, water, sugar, vanilla, cinnamon, and nutmeg.
Cook on medium heat until apples start to get tender (not completely!).
Push the apples to one side of the pan, and pour the arrowroot mixture in and stir.
Cook a few minutes more. Remove from heat.
Lay 4-5 sheets (more if you like really thick crust), ONE at a time!! on a baking sheet. My husband brushes earth balance on every sheet as he layers, but I just do the first, middle and last. You can probably get away with using none, however it's nice on top, makes it buttery and crisp!
After you have the 'crust' prepared on the pan, slice into three parts, widthwise.
Place one TBS full of apples/sauce in one corner and fold like a flag, making a triangle over and over. Do this with all of them and bake at 350 for 5 mins! (um, 5 min not included in the '10 minute turnover'

Phyllo can be frustrating, make sure you have super dry hands, and if it messes up or you end up with a lot crazy pieces, just put them together and put the apples on top! It will still taste wonderful! So in this way, you can't mess up too bad! Great with some chai!
