Best Chocolate Zucchini Cake

Ingredients (use vegan versions):

    2 cups all-purpose flour
    2 cups sugar
    3/4 cup cocoa powder
    2 teaspoons baking soda
    1 teaspoon baking powder
    1/2 teaspoon salt
    1 teaspoon cinnamon
    4 Ener-G egg replacers, mixed according to package directions
    3/4 cup applesauce
    3/4 cup vegetable oil
    3 cups grated zucchini

Directions:

Preheat oven to 350 degrees Fahrenheit.

In a medium bowl, stir together dry ingredients. Add the Ener-G egg replacers, applesauce, and oil and mix well. Stir in zucchini until well combined. Pour into prepared 9x13-inch baking pan.

Bake for 50-60 minutes at 350 degrees, until knife inserted into center comes out clean.  Since ovens vary, it's a good idea to check your cake a little early.

Cool cake completely and frost with your favorite frosting.  I recommend the "Chocolate Frosting" at www.hillbillyhousewife.com which is easily veganized by using vegan margarine and non-dairy milk.

Makes: 15 servings, Preparation time: 10-15 minutes, Cooking time: 50-60 minutes..

i cut this recipe in half and made  cupcakes. I had five for dinner last night. Roll Eyes
Im not much of a baker so I dont have much to compare to, but I did eat 5 in one sitting so I guess you cuold say they were good. I left them out for my friend without telling him they had zucchini in them. He thought they were great and was SHOCKED to discover the truth. We both knew he wouldnt have touched them had he knew. He full on attacked 5 of them without knowing the evil secret I was keeping from him. Try it out!
Oh yes, I lessened the cooking time to 30 min, because I made them cupcake style and the timing was perfect. Also, this recipe cut in half made me 13 cupcakes.

These were delicious!
I covered them with homemade chocolate frosting, I just used butter, soymilk, cocoa powder, and powdered sugar.
My boyfriend and sis love them, I made a pan of regular sized cupcakes and a pan of mini cupcakes (which are incredibly cute).
