Bean Salad with Hearts of PalmIngredients (use vegan versions): 1 can white or black beans
handful of cashews
about 4 stalks hearts of palm, sliced
1 can corn
1 tomato, diced
1/2-1/3 cup sliced olives
Directions:Drain the liquid from all the canned ingredients, toss everything in a bowl, chill and serve!
Makes: 2-3 servings, Preparation time: 5 minutes, plus chill time
