The Monsieur Bobby Cake

Ingredients (use vegan versions):

    1/2 cup flour
    1/2 cup soy flour
    1 granny smith apple, cored-peeled-finely chopped
    2 zucchini, finely chopped
    3/4 cup soy milk
    1/4 teaspoon salt
    2 tablespoons brown sugar
    1 tablespoon lemon zest
    1/2 teaspoon ginger
    1.5 teaspoons cinnamon
    1/2 teaspoon nutmeg
    1/2 teaspoon baking soda
    1 tablespoon baking powder
    1/2 cup pecans
    1 cup chocolate chips (mini size is best)

Directions:

~ Preheat oven to 350 degrees F ~

1. Mix all dry ingredients in a bowl and set aside

2. Grind the pecans into a flour and add to bowl of dry ingredients, then add the chocolate chips and mix again

3. Chop the apple and zucchini into approximately 1"x1" cubes and put in the food processor.  Pulse 5 or so times until they are very finely chopped, then add to the bowl of ingredients.

4. Add soy milk to the mixture and stir until it's all combined

5. Spoon batter into a greased 8"x8" baking pan and bake for 50 minutes or until a toothpick inserted comes out clean

6. Let cool and top with vegan cream cheese frosting.

*I LOVE this cake!  It is very moist and has a unique, sweet and tasty flavor.  It takes a little more effort to mix up the batter, but I think it is worth it.
