Tofu SaladIngredients (use vegan versions): 1 lb firm or extra firm tofu (press out water)
2 celery sticks
1/4 of a red bell pepper
1/4 of an onion (any kind)
chopped pickles of your choice (optional, I didn't do this time, but yummy)
1 big spoon vegan mayonnaise (Vegennaise)
1 tablespoon mustard (spicy is best) (optional)
bunch of black pepper
1 teaspoon ground sage
1 teaspoon salt (you may want more)
pinch of turmeric (just a pinch!)
you can get funky and add chopped red grapes (it's good!!) or walnuts!! (really yummy)
Directions:Make sure you press your tofu gently. Cut into small cubes, place in bowl and then cut some more in a sloppy fashion with a knife.. this makes great chicken like pieces.
Chop up the veggies tiny!! (or use processor)
Mix all together and enjoy!! I must say though, this is WAYYY better, after being left in the fridge for a few hours. The flavors really soak in!
