Vegan McGriddleIngredients (use vegan versions): 1/2 block tofu sliced thin
1/2 teaspoon turmeric
1/4 teaspoon salt
1/4 teaspoon cumin
1/4 teaspoon chili powder
1 tablespoon olive oil
Pancake; 1 1/2 cup flour, 1/2 cup soy milk (or water)
1 teaspoon baking powder
1/2 teaspoon baking soda
1/2 teaspoon salt
1/2 teaspoon sugar, 1/4 teaspoon cinnamon
soy sausage or make some outta tvp
slice of vegan cheeze
agave or maple syrup
Directions:My husband LOVES these. It's his invention. We saw the movie where that guy eats McDonalds for like a month and so this is like the sandwich he eats that has like a pancake biscuit thing.
Heat your cast iron.
Make your pancake batter first. Use less milk/water until it's thick but still able to pour, like muffin batter. You don't have to use the whole 1/2 cup of milk unless you want thinner pancakes.
Make your two pancakes..start soy sausage on side if you can fit it.
I use a warmed plate with a cover to keep the cakes warm while cooking the tofu.
In a bowl mix the oil with the spices. Have your tofu sliced thin like you would for tofu bacon, and coat carefully. I find that slicing the tofu lessen the chance of biting into a chunk of scrambled tofu.. but mostly we do this for sandwiches, it stays on better.
Pan fry the tofu until heated and beginning to brown.
Place some syrup on your plate, then a pancake, then tofu, cheeze and sausage, then top with the other pancake and drizzle the very top wit hmore syrup!! Must eat with a fork, it's huge!!
