Raw Comfort Taters

Ingredients (use vegan versions):

    1 head cauliflower
    2 tablespoons olive oil
    1 1/2 tablespoon nut butter (macadamia, soaked brazil nuts etc)
    1 teaspoon salt (you may want more!)
    sprinkle of water if needed

Directions:

This is SUPER easy and it really sticks to your ribs!! I eat this all by itself!! It keeps well for a few days.

Pulse and chop all ingredients for a minute.

Then process fully until smooth. Depending on you desire for creamy or less creamy, add water and process more.

Serve with your favorite raw gravy. My favs are mushroom gravy (1tbs dk miso, 2-3 mushrooms (soaked) 1 piece of celery, one date, sage, salt, pepper, 1 tablespoon olive oil, some water) or make up your own! In the picture, I did avocado, dates, carrots, oil, salt and pepper, miso) .

Also, you can add nutritional yeast with red pepper for cheesy taters! Enjoy!

Very creamy just like mashed potatoes! 

I used tahini instead of nut butter.  Next time I would add some garlic and some nutritional yeast into the mix to make garlic-y, cheese-y mashed potatoes.
