I LOVE Red Pepper Raw Sandwich WrapsIngredients (use vegan versions): 2 red peppers
2 medium zucchini
1 tablespoon onion
1 clove garlic
1 cup sun dried tomatoes (soaked for an hour)
1 avocado
1/2 teaspoon salt
1 teaspoon ground flax
1 teaspoon chili powder or cayenne powder (optional)
Directions:Process until almost smooth.
Spread as EVENLY as you can (this takes the longest for me!) onto nonstick sheet for dehyrator (I use the fruit roll up trays).
Dehydrate overnight at 100F.
In morning, use a knife to slice off any part that cracked along the edges, and score them into pretty wide slice (remember you need room for fillings!)
Store in airtight container for up to 2 weeks. I ate mine in a week. This recipe makes 4-5 wraps for me.
