Raw Zuppa di PomodoroIngredients (use vegan versions): 2-3 roma tomatoes
2 teaspoons red wine vinegar or sherry
1 teaspoon jalapeno pepper
1 teaspoon red pepper
sprinkle of salt and pepper
1 tablespoon olive oil
diced tomatoes
chopped olives
onion or whatever veggies you want, I used fennel in the picture
Directions:Blend all ingredients in blender except the diced tomatoes and olive/ veggies of your choice, until smooth. Pour into a bowl and place veggie on top and enjoy! This makes a great plain tomato soup as well but up the salt if you make it plain!
