Thai Style ColeslawIngredients (use vegan versions): 1 sm. bag of coleslaw or broccoli slaw
4 TBSP. Natural Peanut Butter
4 TBSP. Rice Vinegar
3 or 4 TBSP. Water (depends on thickness of PB)
1-2 TBSP. Agave Nectar
Dash of Salt
Zest of 1 orange (optional)
Roasted peanuts, broken into pieces (optional)
2 TBSP. Sesame Seeds (optional)
Directions:Place slaw into large salad bowl. In a small bowl, combine PB, vinegar, water, salt, Agave Nectar,and zest of orange. Whisk together until smooth and creamy. Drizzle over slaw and toss well. Sprinkle peanuts and sesame seeds on top. Serve chilled
