Seitaroccoli Panini Sandwich

Ingredients (use vegan versions):

    2 slices wheat bread (the grainier/nuttier the better, so it's got some substance!)
    1/4 head of fresh broccoli
    1 slice vegan mozzerella cheese
    1/2 package premade seitan or homemade wheat gluten
    veganaise (or any other brand vegan mayo)
    fresh ground pepper, to taste
    oregano, to taste

Directions:

Super delicious and simple sandwich you can throw together quickly!

If you have a george foreman grill, you can just spray it with some vegan non stick spray and grill your sandwich that way. otherwise, you might want to use some vegan butter on the outside slices of bread, assemble your sandwich, and warm it up in a pan grilled-cheese style.

If you are using a grill, preheat it now! Then, cut off about a quarter of a head of broccoli. Slice it thin so it's not too chunky and won't fall out of your sandwich. Boil some water in a pot with a steamer top and put in the broccoli. Bring to a boil and let broccoli steam for 5-10 minutes, depending on how crunchy you like it.

While the broccoli is steaming, you can assemble the rest of your sandwich! Put your slice of vegan cheese and some sliced seitan on one piece of bread. I slice them so they're thick enough to make it a hearty sandwich but thin enough that the sandwich closes without everything falling out. When the broccoli has finished steaming, add the slices on top of the seitan along with some freshly ground pepper and a few shakes of oregano.

Put the assembled sandwich in your grill and grill for about 5 minutes, or till the cheese has melted and the bread is nicely browned. Take off the top bread slice and spread with some vegan mayo. Voila! Delicious and (mostly) healthy sandwich!
