Carrot NogIngredients (use vegan versions): 1/3 cup coconut milk
1/2 cup carrot juice
1-1/4 cup soy milk
2 teaspoon organic evaporated cane juice (or other sugar)
1/8 teaspoon cinnamon
1/8 teaspoon nutmeg
Directions:First whisk or mix the coconut milk to smooth if its texture is very lumpy or uneven. Next combine all the ingredients in a blender or food processor for 4 minutes. Pour into two seperate cups and serve. May be garnished with a sprinke of nutmeg and a fine grated carrot.
