Cinnamon Nutmeg Baked Apples Ingredients (use vegan versions): apples (however many you wish to make, I used Fuji apples because they bake well)
boiling water, enough to half-fill the baking dish
a small handful of cinnamon sticks- I used 6, I love cinnamon!
1 nutmeg nut
Directions:Peel apples about 1/3 of the way and core them.
Using a mortar and pestle (or use a food processor, etc), crunch up the cinnamon and nutmeg, this doesn't have to be ground, just a rough chop.
Put apples in baking dish peeled side down. Add the water and spices.
Cover and heat for about 10 minutes on 350 degrees Fahrenheit or until the apples are tender.
Turn right side up and serve warm.
I served these with a spoon of vanilla soy frozen desert in the middle of the baked apple, and sprinkled crispy cereal on top. These would be good with a handful of raisins in the middle, topped with chopped nuts or granola.
