Applesauce Muffins

Ingredients (use vegan versions):

    1/2 cup unsweetened applesauce
    1/2 cup vegetable oil (I usually use light olive oil, but any oil will work)
    1 1/2 cups flour (I use either whole wheat or unbleached all-purpose white flour)
    1/4 cup molasses OR about a tablespoon of SweetFiber* OR a sweetener of your choice
    1/2 teaspoon cinnamon (or to taste)
    1/2 teaspoon baking soda
    *SweetFiber is an artificial sweetener derived from fruit. I don't know if it's cruelty-free, but the product itself is free of animal products.

Directions:

Pretty simple: I just put all the ingredients in a bowl and stir until everything is combined. But be careful not to overmix! The batter should be thick but not too stiff. Pour into lightly greased muffin tins and bake at about 325 degrees Fahrenheit. Keep an eye on them and check their progress after ten minutes if making mini muffins, 15 if making larger muffins or a loaf. They will be springy and moist when done.

For a variation, sometimes I add about 1/4 cup of old-fashioned (not instant) oatmeal and a couple of tablespoons of fruit juice. Or a handful of chopped dates or nuts. You can even make this in a brownie pan or cake pan if you like. It's a pretty adaptable recipe.

I normally eyeball the measurements, so you might want tweak the amount of whatever sweetener you decide to use. Just toy around with it to find what works for you. And don't worry about refrigerating these; they'll keep at room temperature for a couple of days.

This recipe is also doggie-approved! My three Chi-mix babies LOVE these!

Source of recipe: I once found a recipe for muffins on a computer CD called One Million Recipes (the actual title was longer but I can't remember it). I kept tinkering with it and eventually came up with this. I used to work at a women's gym, and whenever I took these in, they were always a big hit! Lots of them wanted the recipe, which I shared freely.

Makes: 12 regular muffins or 24 mini muffins or a thick 9x9 cake or 13x9 loaf, Preparation time: 5 minutes, Cooking time: 15-25 minutes

I added a fair bit more applesauce, as well as some soy milk to make the batter more workable, used sugar as my sweetener, and they turned out pretty well. The texture is really good, they taste yummy, and were so simple to make.  Thumbs Up

You needed more liquid? That's surprising, since whenever I've made them, the batter was pretty moist. Not runny, mind you, just kind of thick.

These turned out nicely, next time I'll add more sugar because the oilive oil taste is slightly palatable. I also added caramel flavoured soya yogurt instead of molasses and a dash of sugar.. needs more sugar but is good  Grin
