Blueberry Banana Muffins

Ingredients (use vegan versions):

    1 large banana, soft (brown on the outside)
    1/3 cup oil
    2 teaspoons vanilla
    3/4 cup sugar
    1 1/2 tablespoons ground flax seed
    2 teaspoons baking powder
    1 teaspoon baking soda
    1 cup soymilk with 1 1/2 tablespoon vinegar
    1/4 teaspoon salt
    1/2 teaspoon cinnamon
    2 1/4 cup flour
    blueberries (fresh or frozen)

Directions:

1. Prepare the soymilk with vinegar first so that it curdles by the time you need it.
2. Mash the banana in a bowl until it's real mashed. Add the oil, sugar, vanilla and flax and mix that all up.
3. Dump in the baking powder, baking soda, salt, cinnamon and flour and fold it slightly with the wet ingredients. You want it somewhat incorporated but not overmixed.
4. Pour in the curdled soymilk and mix it in. If it's to dry, add in soymilk as needed until it's about the thickness of pancake batter.
5. Fold in the blueberries.
6. Distribute the batter into a 12-muffin pan that is greased. pop that in a 375 degrees Fahrenheit oven for 15-18 minutes or until they are risen and golden and delightful. Now you take them out, cool it down, and eat them. yay!

Source of recipe: Blueberries were on supersale and my roommate had some old bananas.

Makes: 12 muffins, Preparation time: 20 minutess, Cooking time: 25 minutes

 Smitten These r super good!!! I used apple sauce instead of oil but the muffins kinda stuck to the muffin liners Sad I dunno if that's why?!?! The muffins turned a kinda green color too (blueberries + bananas = green) and I topped some of the muffins with shredded coconut... yum Smiley This made 18 muffins for me... 5 stars!

Very yummy!
My omni mum & step dad couldn't even tell the difference between them & the non-vegan muffins you buy at the bakery & we all went back for seconds.
Next time I would probably use 1/2 cup of sugar (or 2/3) instead of 3/4 because I found them to be a bit too sweet, but still very delicious. I will be making these again for sure.
