Vegan Mayonnaise Biscuits

Ingredients (use vegan versions):

    1/3 cup vegan mayonnaise of your choice
    1/3 cup water
    6 tablespoons oil
    2 cups flour
    3 teaspoons baking powder
    1 teaspoon salt
    1 teaspoon sugar (optional)

Directions:

Preheat oven to 450 degrees Fahrenheit.
Lightly oil muffin tins.
Mix dry ingredients together (sift flour!) Make a "well" in the center of dry ingredients.
Mix wet ingredients together. Pour into "well".
With clean hands or a fork, mix components together.
Spoon into muffin tins (about 2 1/2 tablespoons, but it depends on the size of your muffin tins).
Cook for 15 minutes or until lightly golden brown.
Serve with your favorite buttery spread, gravy or jelly.

Source of recipe: I was out of soy milk, but not of vegan mayonnaise. After some thought, I came up with this recipe - wrote it while making them.

Makes: 10-12 biscuits, Preparation time: 15 minutes, Cooking time: 15 minutes

Not too bad.  Mine were a little crumbly but i didn't have baking powder so i used arrowroot and cream of tartar. I also put some vegan cheddar rice cheese in the middle and topped it with apple butter.  They were good

These were fantastic!  Thumbs Up I did have to cheat a little bit and add *some* soy milk because for some reason there wasn't enough liquid to give it a batter consistency, but I really didn't need to put too much in. They were super easy to make and taste just like how a biscuit is supposed to!! Smiley

These were so great!!! They kind of tasted slightly like pie crust. I wonder how that would turn out?
