Raw Burger

Ingredients (use vegan versions):

    4 carrots (you can shred in processor first or chop them)
    1/2 onion
    1/4 cup mushrooms
    1/2 red pepper
    handful of cauliflower or beets or other stiff veggie you like
    1/2 jalepeno (omit if you don't want spicy brugers)
    pinch salt or squirt amino acids (small squirt- it is strong. I use Bragg's Amino Acids)
    pinch cumin, paprika, coriander, sage, black pepper, tumeric (you can play around with this)
    water as needed
    1/2 cup soaked sunflower seeds (optional, helps with meaty texture, ups protein)

Directions:

Pulse all ingredients without water, until well chopped and mixed, then process with a little water at a time until a not-too-wet dough forms. Shouldn't take long, you don't want it too processed like a smoothie. You want little chunks.

Form patties and place on non-stick sheets or fruit roll up sheets.

Dehydrate for 2 hours at 115 degrees Fahrenheit (the moisture content keeps the temp a little lower than that in side the machine).

Then 1-2 hours at 105 degrees Fahrenheit, until dry and firm enough to flip. You can speed it up, by taking the flipped patties off of the non stick and placing them on the screen or mesh.

Two more hours like this, or until you like. You can eat these immediately if you don't mind the soft mushy texture, but the dehydrator helps to form a solid patty. Be sure not over dry. Time varies per machine. You want them a little moist inside. Store in airtight container and eat in 3-4 days.
