Rawesome Tom Yum Spicy Thai SoupIngredients (use vegan versions): 1/2 cup coconut meat
1/2 coconut water (not milk, but if you try that let me know how it is)
1/4 to 1 whole jalepeno or serrano pepper (depends on you heat preference!)
1 good pinch of oregano (it doesn't sound thai, but trust me!)
pinch of basil
Directions:Heat a backpacking bowl or something else that can stand heat, in the oven for ten minutes before you make this.
Use a blender for a smoother soup, but a processor works great too.
Blend all together.
Pour into warmed bowl.
SO good! This is sure to warm you up on a cold day and clear your sinuses. It sounds too simple, but the sweetness of the coconut and the spicy warmth of the peppers is divine.
