Sweet Potato CurryIngredients (use vegan versions): 1 sweet potato
3/4 cup black beans, rinsed
1/2 red bell pepper, julienne
1 cup raw broccoli
curry (how much is a matter of personal taste)
pinch salt
olive oil and/or vegan margarine
Directions:Saute bell pepper and broccoli in olive oil or margarine for 5 minutes. Meanwhile, microwave the sweet potato for 5 minutes and chop it into cubes.
Add the sweet potato and broccoli to the pan. Add curry and salt, and extra olive oil or margarine to keep it from drying out.
Cover and cook for about 10 more minutes, stirring occasionally. Taste-test to experiment with how much curry to use.
Source of recipe: I invented this recipe out of the ingredients in my kitchen and a newfound love for curry. I thought curry and sweet potatoes might be complimentary, and it turned out delicious.
