Smoky White Bean Quesadillas

Ingredients (use vegan versions):

    4 whole wheat tortillas
    1 cup white beans
    1/3 cup nutritional yeast
    1/2 cup chopped tomatoes (fresh or canned)
    few drops of liquid smoke
    garlic powder
    1/2 teaspoon salt (or to taste)
    pepper or cayenne pepper to taste
    cilantro and/or salsa for serving

Directions:

Blend together the white beans and chopped tomatoes until very smooth. Add nutritional yeast, liquid smoke, garlic powder, and salt and pepper to taste. (I don't use canned beans so I add a little extra salt. If you are using canned beans, you may want to rinse them and/or use less salt.) Blend again until well combined and smooth.

Heat a dry nonstick skillet over med-high heat. Put in a tortilla, spread one-half of the bean mixture on the tortilla, then top with another tortilla. Cook over medium heat until crisp on one side, then flip and repeat on the other side. Once it is cooked and the bean mixture is warm and gooey, remove from pan, slice into 6-8 wedges. Repeat with the other tortillas.

Serve with cilantro and/or salsa.

Source of recipe: I came up with this recipe with the last little bits of things in the fridge and the last 1/3 cup of nutritional yeast! Soy cheese, pshaw!

Makes: 4 servings, Preparation time: 5 minutes, Cooking time: 5 minutes

I've been waiting for this recipe to come out of the new recipe queue so that I could review it. Both my husband and I love it! My husband's comment: "you could serve this in a restaurant!"  which is high praise from him. Very easy to make and to customize. I've made it with both whole wheat tortillas and corn tortillas and both were really good. Instead of liquid smoke, I use smoked paprika which gives it a really good flavor and a beautiful reddish-orange color. I top with caramelized onions, spinach, cilantro, and some chopped grape tomatoes before cooking so all the ingredients get nice and warm. My husband adds olives.  Yummy and so easy. We make these regularly now.

WOW!!!  I can not rave about this enough.  Unbelievable!  I used one can of cannellini beans ane 1.5 roma tomatoes.  I put a little guacamole and salsa on top but the filling was so good it really didn't need it.  I just finished eating mine and I already want to make it again...Next time I'll make a double batch!

Absolutely delicious! I loved this.  I only had garbonzo beans so I used that and blended it with Trader Joe's Pineapple Salsa instead of tomatoes. WoW! I added a little canola oil to smooth it out  and added the rest of the ingredients.  So freaken good. You have to grill some onions with this. It is a must. Thank you for this wonderful recipe! This is my favorite VW recipe as of late.....I add an onion when blending it.
I made my quesa with some raw spinach on top and it was awesome.
I still plan to use this sauce to make mac n cheese and see what happens. I've got a shitton of whitebeans in the fridge just waiting to be played with!

YUM Thumbs Up  Loved them, although I would have liked to make them hotter! maybe next time I will add in some fresh diced jalapenos!

I still plan to use this sauce to make mac n cheese and see what happens.

I tried my leftover cheeze on pasta and I didn't really like it; it was kind of dry and grainy.  Maybe if you added some fat to it, the mouth feel would be better.  I did like it in the quesadillas though.

I'm pregnant so the idea of smoky doesn't appeal to me, but I modified the recipe by a lot and it seems pretty versatile.  I simply blended some mexican seasoning, a can of drained/rinsed white beans, and a couple canned tomatoes, and spread it on one tortilla -- vegan sour cream on the other -- and cooked it like that.  It was actually quite delicious and I've made it about 3 times this week.  Mmmm!

yum, a hit with omnivores and vegans alike, and the leftover bean sauce is great for dipping veggies in! 5 stars. it reminds me of smoky hummus, though it is slightly cheesy. I used a 15 oz. can of white beans and half a 15 oz. can of diced tomatoes and that made enough for four quesadillas (8 tortillas). I added some chipotle taco seasoning to make it smokier and served it with a side of kale sauteed with the other half can of tomatoes, salt & pepper. awesome recipe, and so easy!

Liquid smoke can be found in a regular grocery store, usually near the BBQ sauces and other condiments. It is made by burning wood, collecting the smoke, passing the smoke through water, and collecting the resulting condensation. This ingredient gives the "smoky" flavor in the recipe.  I use smoked paprika instead and that works well too.

I thought the liquid smoke really "made" the recipe, but I have not tried it without.

Amazing!
My roommate and I are both vegan and we were looking for a good quesadilla recipe.
I used chickpeas and canned tomatos made with cilantro and lime. Also added sauteed onions after putting the bean mixture onto tortilla.
Very filling! Next time I'm going to add crushed red pepper flakes... I love all things spicy  Smitten

This is a really good recipe and super quick and easy to make!
They don't taste as good plain .. they taste kind of potato-ey or like perogies if you eat them plain.. just so you guys know! But who would eat them plain! I made them according to the recipe - I used white kidney beans and whole wheat tortillas and topped them with fried onions, salsa, cilantro and blue corn tortilla chips on the side.
All of the additions people suggested sound wonderful, but I was just lazy Tongue
