Flax Seed Crackers

Ingredients (use vegan versions):

    2 cups (1/2 liter) whole flax seed
    2 (1/2 liter) cups water
    1 to 2 cups diced onion
    3/4 cup (125 ml) pumpkin or sesame seed
    3/4 cup sunflower seed
    2 cups water
    1 tablespoon (20 ml) tamari or Brags Liquid Aminos
    1 tablespoon Cajun spice, optional
    1 teaspoon (5 ml) Himalayan or sea salt
    more salt for tops

Directions:

First, soak flax seed with equal amount of purified water 4 to 12, or even 24 hours.

Soak any other seeds you choose in extra water for at least two hours~then drain excess.

Slice as much as two cups onion.

Possibly shred some carrot or small dice tomato or ripe bell pepper.

Mix the gooey flax with other drained seeds, any diced veggies and spices you choose and some really good salt.

Spread thin onto dehydrator trays and sprinkle with more salt. Dry 'till crisp, about 6 hours on medium heat. Or over night on cookie sheets if your gas oven has a pilot that keeps it hot enough to do the trick... some times it takes days in an oven heated only by the pilot light.

This makes four square feet about 1/16th inch (30 mm) thick.  Store in mason jars.

Note: With my own Cajun spice they almost taste like pizza. They are great on there own or with any dip, especially humus.

Makes: 12 servings, Preparation time: 17 minutes, 24 hours soaking time, 6 hours dehydrator time
