Awesome Vegan Lentil RiceIngredients (use vegan versions): 2 cups basmati rice
1 cup yellow split peas dal (toor dal)
11 cups water
1/2 teaspoon fenugreek
1 tablespoon coriander seeds
1 tablespoon bengal gram
1 tablespoon urad dal
2 red chillies
5 small hot peppers
1 small piece cinnamon
5 cloves
1/4 teaspoon asafoetida
1/4 teaspoon turmeric
1 sprig kari leaf
1/2 cup peanuts (cashews for non dietary version)
2 carrots
2 tomatoes
2 onions
1/2 cup peas
1 small lemon
1/2 teaspoon tamarind paste
salt - to taste
Directions:1) Cook the 2 cups of rice/1 cup of Dal with Six cups of water until rice and Dal is soft and keep aside. (Approx 20-25 minutes)
2) Fry fenugreek, Coriander seeds, Bengal gram, Urad Dal, red chillies, Pepper, Cinnamon and cloves with two teaspoons of oil till all the ingredients turn into golden brown, add kari leaf and asafoetida grind to a coarse powder and keep aside.
3) Dice the onions, carrots and tomatoes into small pieces.
4) Mix the tamarind paste to five cups of water in a pot, add salt, turmeric powder and heat it on the stove.
5) When it boils (approx after ten minutes ) season it with mustard and curry leaves. Add the chopped onions,tomatoes, carrots, peas into the boiling water and cook until done (veggies are al dante).
6) Add a little water to the ground ingredients (Step 2), Mix well and pour into the boiling Veggie Mix.
7) Add the cooked Dal rice (from Step 1) into the boiling Veggie Mix.

Add roasted peanuts nuts to the boiling Veggie Mix. (NOTE: Make this mixture a little bit watery to allow the rice/veggie mix to boil well while avoiding burning the bottom of the pot).
9) Keep on Stirring the pot.
10) When the mixture comes to the boil, remove from the flame.
11) Garnish with coriander leaves.
Source of recipe: I have cooked for over 40 years and the last few years I have been experimenting with recipes constantly to make them more effective for people with dietery concerns/restrictions (whether it be losing weight or health reasons) at the same time not compromise the taste of the dish itself. This is my version of an Indian recipe (specifically from Udupi, Karnataka) that is customized to fit this category
