Grey Peas and Onions

Ingredients (use vegan versions):

    1lb grey peas
    2 large onions
    oil for frying
    salt and pepper to taste

Directions:

Soak peas in cold water overnight. Drain, cover with cold water and boil until almost cooked (~40 minutes). Add salt (I suggest 2 t) and cook until done. Drain.
Cut onions vertically in half and slice into thin 'moons'.
Heat oil in pan. Fry onions with salt and pepper until golden/brown.
Serve your peas with fried onions on top.

This won't work with green peas! You could however try yellow or split peas.
This is originally served with fried bacon bits, so you could figure out something to substitute it.

We have a saying: the more grey peas you eat on Christmas and New Years Eve, the more money you will have the next year. ;]

Source of recipe: this is traditional Latvian recipe that is also a Christmas and New Year's dish.
