Christmas Morning Wife Saver

Ingredients (use vegan versions):

    8 slices of whole wheat bread
    8 slices of vegan  orange cheddar cheese (enough to cover the bread layer)
    1/2 cup of sliced mushrooms (enough to cover the bread layer)
    about 1 cup of spinach (enough to cover the bread layer)
    egg replacer equivalent to 3 eggs
    1/4 cup of minced white onion
    1/4 cup of  chopped green pepper
    a pinch of pepper
    1 1/2 cups of plain soy milk
    1/2 cup of vegan margarine, melted (I use Earth Balance)
    crushed cornflakes or corn meal

Directions:

Grease a glass baking casserole dish that is large enough to lay out 4 pieces of bread. Then, take the crust off of the bread slices and lay out 4 pieces on the bottom of the pan, keep the other 4 and put them off to the side to apply to the top of the casserole later.

Cover the bottom layer of bread with the cheese, mushrooms and spinach.

Now cover this layer with the remaining 4 slices of bread.

In a bowl prepare the egg replacer according to the box. mix in green pepper, onion, pepper and soy milk. Pour over the casserole. Cover and allow to sit overnight in the fridge.

On Christmas morning after you have opened all your presents and made coffee etc.,  take the casserole out of fridge and melt the earth balance butter in microwave. Pour this over top of the casserole. crumble the cornflakes over the top.

Bake in a 350 degrees Fahrenheit oven uncovered for 1 hour. (Allow to get crispy on the top this is the best part). Remove from oven and allow to sit for 10-15 minutes before serving.

Now sit, eat and be merry because this is the best Christmas morning breakfast ever! and its is all prepared the night before so no extra work on Christmas day(this is always a good thing Wink

i had the best christmas morning this year, it was sooo delicious. i also recommend adding some crumbled tofu to the layers aswell, it would make it even better:). the egg replacer really made the wife saver rise
