Crepes with Berry Sauce

Ingredients (use vegan versions):

    1 cup plain flour (I use barley flour)
    1/2 teaspoon baking powder
    1/2 teaspoon cinnamon
    1/2 teaspoon powdered ginger
    1 tablespoon raw sugar
    1/4 teaspoon salt
    1 1/2 cups vanilla soy milk
    2 tablespoons sunflower oil
    vegan margarine
    Sauce:
    1 cup fresh/frozen berries
    1/4 cup raw sugar

Directions:

Crepes smothered in delectable tangy-sweet berries.

Put the berries in a small saucepan and add water to halfway up the berries. Add the sugar. Simmer this mixture while you cook the crepes, until nicely reduced.

Sift the flour and add the baking powder, spices, sugar and salt. Stir together and add the wet ingredients. Whisk or beat until smooth.

Warm a frying pan over medium heat and grease it with a little margarine. Once hot, reduce heat a little and pour in about half a cup of crepe batter. Swirl to cover the pan base. Cook until the batter is just dry, then shuffle the pan to move crepe to one side and flip with a spatula. Cook for another half a minute or so. Remove crepe and repeat with the rest of the batter.

Roll up the crepes and place on a plate. Pour over the berry sauce, and enjoy.

Makes: 1-2 servings, Preparation time: 5 minutes, Cooking time: 20 minutes

I thought this recipe was awesome! I was just about to throw out my crepe maker, thinking I could never find a way to make whole-wheat crepes that didn't have eggs in them, and this recipe was so amazing! I can keep my crepe maker and be happy eating healthy crepes. Like I mentioned, I used whole-wheat flour and they came out lovely. We cheated a little and had a couple with Nutella in them, but the ones with the berry sauce were fantastic also. My husband was very very happy about breakfast that day. Thank you!!  Smitten

These were perfect.  Smitten I lost my favorite vegan crepe recipe about a year ago and haven't had luck til now. Even the first crepe turned out great! I used canola oil instead of sunflower, and subbed 1/4 tsp allspice for the 1/2 tsp cinnamon because we were out and I didn't realize it when I started.. The ginger gave them a really nice touch, too! Anyway, it made 6 medium sized crepes & two omnis gave a thumbs up to them.

We didn't use the berry sauce, but I've done that before and it is good. We just spread them with different jams (strawberry, peach amaretto, blackberry) and filled them w/ banana slices with a little drizzle of maple syrup. Yumm.

I made a few mistakes that I'll need to improve upon, such as the amount of batter I pour and getting the hang of cooking them but otherwise, these were delicious! I made a berry sauce using blueberries & raspberries and with the leftover sauce mixed it in with some vanilla soyogurt. So good.

So I came on here looking for something yummy for Sunday breakfast (as it's already Sunday here in Oz) and as these were on the home page I thought I'd give them a go....

WOW WOW WOW WOW WOW WOW WOW!!!!!!!!!!!!!!!!!!!!!!!    Smitten

These were soooooooooooo awesome.  Better than 'real' crepes!!!

The only changes I made were that I put in 1 tsp of cinnamon as I didn't have ginger, and used 2 Tbs sugar cos I only had plain soy milk.  Oh and I used wholemeal flour instead of white.  (OK, now it sounds like I made heaps of changes, but really it wasn't that different!!!)

Then of course I was out off frozen berries (and fresh berries cost an arm and a leg over here) so I used fresh banana slices and low cal maple syrup instead.  The mix of cinnamon + bananas + maple was almost orgasmic!!   2Funny

My batter made 5 huge crepes and I ate all of them of course, because I'm a total pig, and my fella is staying in Brisbane this weekend so I was all by my lonesome  Cheesy  THANK YOU SO MUCH FOR THIS RECIPE!!!!!!!!!!!!!

 This looks really good. I will add to my recipe box. I will substitute the sugar for agave and the soy milk for hemp milk.
