No Yeast Bread

Ingredients (use vegan versions):

    4 cups flour
    1 tablespoon  sugar
    1/2 tablespoon baking powder
    1/2 tablespoon baking soda
    2 teaspoons vinegar
    1 1/2 cups water

Directions:

Mix all ingredients in bowl and knead 5 minutes. Shape into a round loaf put cornmeal on the bottom and place on a baking sheet. Put in to preheated 400 degree oven and bake 40 minutes.

Makes: 1 loaf, Preparation time: 10 minutes, Cooking time: 40 minutes

Hey good idea with the vinegar, baking soda combo.  I used all whole wheat flour for mine, and it turned out very well.  It is a little bit hard on the outside, but that's fine by me.  It tastes good, and it was the easiest loaf of bread I've ever made.  Thanks.

I just made this bread... it's really good. It almost tasted similar to a pretzel.... and instead of putting cornmeal on the bottom, I used wheat bran- it worked fine.

It was a little hard, but good nonetheless.. thanks so much!

I just made this bread and it turned our great! ( I used whole wheat flour) It was my first time making bread ever, and it couldn't have been easier. Definately one to keep for the recipe book! Thumbs Up

This was my first quick bread, it was easy and i'll keep it in mind for times when there is no yeast around. I smudged some oil on the pan in lieu of cornmeal. The bread was like a loaf of pancake, not bad. It was good dipped in some herb-infused olive oil, not so good as a sandwich bread. I'll probably try it again with some zucchini in the dough to reduce the density.

How do you get that nice crust? I agree with "greencow" it really was kind of like a pancake (but pretzely).

How doughy is this supposed to be before putting it in the oven? Mine seemed too wet so I think I messed it up by adding in too much additional flour as I kneaded it. It came out really hard.
