I'm unable to eat these cupcakes because they contain flour (i'm gluten intolerant) but they aren't for me anyway...They look good though!  I'll take pictures once I get them decorated and upload.  Sure do smell good...

Delicious!  I've never had cupcakes that didn't stick to the paper.....these were perfect...now only if I could master my icing recipe....

This is my favourite cake I've ever made! I cut back on the sugar only a little, just to taste, and made a lemon buttercream frosting to top.
The texture was fantastic as well.

These were a big hit! I double the recipe and made cake for dinner with my parents and cupcakes for a Saturday night with the girls. They were well received by all! I made a simple butter cream frosting and topped them all with coconut. Very tasty!

make sure you use enough grease in the pan - the same thing happened to me when i didnt grease it enough.

I find this cake very yummy! It's not a hundred percent like the omni white cakes I have eaten, but it actually tastes better! It is very spongy. The lemon is VERY important though as it reacts with the baking soda to give the cake some lift. If you decide not to use it, try vinegar instead. I also used apple sauce instead of oil. mmm.

Thanks!  Thumbs Up

seriously good.  I modified the recipe since I cannot have regular flour but I used the same amount of All Purpose Gluten Free flour and added 1/4 teaspoon Xanthan Gum.  Make cupcakes with it and baked for 16 minutes.

Turned out amazing!

i'm making these today and i'm wondering how to do it using the cupcake liners. i know you said to grease the pan well so will they stick or fall apart if i use the liners? i've never made white cupcakes and i'm so excited to try these!
