Favorite White/Yellow Cake

Ingredients (use vegan versions):

    1 1/2 cup flour
    1/2 teaspoon baking soda
    1/2 teaspoon salt
    1 cup sugar
    1/2 cup oil
    1 cup icy cold water (important, although I don't know why..ask a scientist)
    2 teaspoons vanilla - (Madagascar vanilla gives a better vanilla flavor)
    2 tablespoons lemon juice

Directions:

This recipe tastes like a typical omni vanilla cake.

Preheat oven to 375 F.

Grease an 8 or 9 inch cake pan.

Sift flour, sugar, baking soda and salt together in a bowl until very light and airy..about 3 times.

In a small bowl combine oil, cold water and vanilla.

Add liquid ingredients (except lemon juice) to dry and combine.

Once the batter is combined add the lemon juice and stir quickly then pour into prepared pan.

Bake for 25 to 30 minutes or until cake tests done with toothpick.

It rises extremely well and is light, fluffy, moist and rich at the same time.

Makes: 1 8-inch or 9-inch cake

This was so delicious and moist! I added a bit more lemon juice, some poppy seeds, and made a nice simple frosting for it. We will surely be making this often. Thanks for the simple, yummy recipe!

When I made it, I didn't have an 8x8, but an 8x11. I also didn't have baking soda, vanilla, or lemon juice. I did however have pineapple juice, and baking powder, which is what i used. It was very good, but bar like instead of cake like. I added some pineapple chunks into the cake and used pineapple juice instead of a full cup of water. I also made a caramelized topping for it with almonds, walnuts, and pineapple chunks. Will definitely make this recipe again, maybe I'll try the way it's written to be made next time.  Wink

I made it with cake flour.
Added a little bite more water.  The batter was like a water pancake mix.  It came out well.

this is delicious.  ive made it a couple times and just make sure you grease your pan enough and thoroughly mix in the lemon juice.  the first time i made it i wanted to get into the pan so quick i under mixed it and there were some more yellowy/lemony swirls of cake.  the 2nd time i mixed more and the lemon taste isnt really noticeable.  good job thhf!

I don't know... if it wasn't for the fondant I don't think i would have ate it. Even with all the goodies like fresh berries it still wasnt as good as everyone was making it out to be.  Undecided Its kinda disappointing considering I worked ALL DAY on it.
