Tofu Quiche

Ingredients (use vegan versions):

    CRUST:
   1/3 cup peanut oil
   1/2 cup water
   1 tablespoon soy lecithin
    pinch of salt
    2 cups all-purpose wheat flour
    FILLING:
    1 lb steamed spinach (or 10 oz frozen, steamed)
    4 oz shitake mushrooms, chopped
    1 onion, diced
    1/4 cup oil, plus a little extra sautéing
    1/8 cup tamari soy sauce
    1 lb. tofu
    1/4 cup nutritional yeast
    1/2 cup water (or as needed)

Directions:

Crust:
Preheat oven to 400 F. Mix first 4 ingredients in a small bowl. (Lecithin is optional, but helps oil and water emulsify). Put the flour into a pie pan, and mix liquid from the bowl into it until the mixture can be formed into a ball. Press and flatten to the sides and bottom of pie pan using your hands. Prick with a fork (DO NOT FORGET THIS STEP). Bake for 15 minutes for a partially baked crust.

Filling:
Sauté the onions and mushrooms in oil, add tamari soy sauce. In a blender or food processor, blend tofu, 1/4 cup oil and nutritional yeast. Pour into a large bowl and mix in steamed spinach, sautéd onions and mushrooms. Pour entire mixture into partially baked crust and bake at 350 for 30 minutes. Let cool. Enjoy!

Soy Lecithin is an emulsifier, meaning it helps bind two substances that don't usually bind (like when you mix oil with water in my recipe  Grin). It can be used instead of eggs in lots of recipes, and is a common ingredient in baked goods and in butter/margarine products. Shocked
