Smokey BBQ Avocado and Tomato Baguette

Ingredients (use vegan versions):

    1 long vegan French stick/baguette
    1 large avocado
    2-6 (depending on size) juicy vine tomatoes
    1 handful of fresh rocket (arugula)
    smokey BBQ sauce

Directions:

Cut baguette down middle, spread BBQ sauce down both sides of the inside of the bagette, cut tomatoes and avocado into slices apply evenly to inside of baguette, add rocket evenly, close baguette and cut into portions and eat.

You can add olives or jalapenos and similar type of things for extra taste..also sweet chilli sauce or mustard can be used instead of BBQ, but I'm sure you don't need me to tell you what you like

Makes: 2-4 servings, Preparation time: 5-10 minutes

delicous.  such a good idea to put avocado and bbq sauce together! i did make a few changes.  i was baking fries, so i decided to bake the sliced tomatoes as well, and the baguette.  i also used guacamole rather than just avocado and added some sauteed mushrooms.  I heated the whole thing in the oven.  really easy and good.

i had a bag of frozen grilled eggplant and zucchini from trader joe's to try, and so i sauteed it along with some onion and put it into this sandwich... sooo yummy and easy!!  this is definitely going to be made frequently by me, most often as a nice lunch on the weekends! i just gotta say,  this recipe makes me really happy.
